- 1 sm red onion julienned
- 1 lrg round tomato peeled, seeded,

- 2 x garlic cloves thinly sliced
- Â Â Extra virgin olive oil for sauteing
- 1 x guajillo chile thinly sliced
- 1 lb mussels debearded, cleaned
- 2 c. beer
Direcciones
- Saute/fry red onion, tomato, and garlic in extra virgin olive oil till soft and translucent/soft. Add in guajillo chile, mussels, and beer. Steam for 10 min. Throw away any unopened mussels. Serve in a shallow bowl.
