Receta Nana Mcnally's Rhubarb Cake

Ingredientes
- 1Â 1/2 c. Sugar, white, brown or possibly mix
- 1 c. Butter
- 1 x Egg
- 1 tsp Vanilla extract
- 2 c. Unbleached flour
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 c. Lowfat milk, or possibly
- 1 c. Buttermilk plus a little more
- 2 c. Rhubarb, finely minced
- 1/2 c. Sugar
- 1 tsp Cinnamon
- 1/2 c. Coconut, flaked or possibly shredded
- Â Â Minced nuts, optional
Direcciones
- Preheat oven to 325x. Grease a 9" x 12" baking pan.
- Cream sugar, butter, egg and vanilla. Fold in flour, baking soda, salt and lowfat milk. Mix in rhubarb. Turn into prepared pan. Bake for 1 hour.
- Combine topping ingredients and sprinkle on top of the cake.
- Note: My original directions don't indicate when the topping gets sprinkl on - before or possibly after baking. My guess is before.
