Think you can't improve on the Original Toll House Chocolate Chip Cookie Recipe? You can if you live at a high altitude (3500 to 6000 feet) and you make the recommended adjustments by the Nestle Company. I have made these cookies since I was young girl and it was only recently that I noticed the footnote regarding high altitude modifications. The first batch I made using these adjustments gave stellar results. The old cliche that "you can't teach an old dog new tricks" is a myth when it comes to bakers and their tried and true recipes. If you live and bake at high altitudes, consider modifications to help you go from "good" to "great!"

  1. Preheat oven to 375 degrees F.
  2. Combine flour, baking soda and salt in small bowl.
  3. Beat butter, granulated sugar, brown sugar, water and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time beating well after each addition.
  4. Gradually beat in flour mixture. Stir in morsels and nuts.
  5. Drop by rounded tablespoons onto ungreased baking sheets.
  6. Bake for 8-10 minutes or until golden brown.
  7. Cool on baking sheets 2 minutes; remove to wire racks to cool completely.
  8. NOTE: If omitting nuts, add 1 to 2 tablespoons all-purpose flour, making the total amount of flour 2 1/2 cups plus 1 to 2 tablespoons.
