Receta New Zealand Orange Roughy With Papaya Rice And Fruity Salsa

Ingredientes
- 3 c. parboiled white rice
- Â Â Or possibly twenty-minute rice
- 6 c. papaya juice
- 2 Tbsp. margarine
- 1Â 1/2 tsp salt
- 1/4 c. fresh chives chopped
- 4Â 1/2 lb orange roughy or possibly 12 six-ounce fillets
- 12 ounce seafood glaze and basting sauce
- Â Â (commercial or possibly homemade)
- 2 x papaya peeled
- Â Â seeded and diced
- 2 x kiwi fruit peeled and diced
- 1 lrg red bell pepper seeded and diced
- 1 lrg red onion diced
- 2 x jalapeno peppers seeded and chopped
- 1/4 c. fresh lime juice
- 1/4 c. fresh lemon juice
- Â Â salad
- Â Â steamed green beans
Direcciones
- SALSA: Combine all ingredients. Cover and chill till ready to serve.
- RICE: Prepare papaya rice by bring papaya juice to a boil. Add in margarine and salt. Stir in rice. Reduce heat, cover and simmer 20 min. Before serving, add in chives.
- ENTREE: Rinse fillets under cool water; pat dry. Grill fillets over medium heat, 6 inches from source for 3 to 4 min each side or possibly till fish flakes easily with a fork. Baste with prepared sauce (your choice).
- Serve fillet topped with salsa. Plate with rice and a steamed green vegetable.
