  2. 2. Add in tomatoes, breaking with fork. Stir in 2-1/2 c. water, rice, and basil. Stir in 1/2 tsp salt. Cover and bring to boil. As soon as mix starts to boil, reduce heat to low and simmer for 20 mins, stirring once.
  3. 3. Stir in pepper, cover, and simmer 5 mins.
  4. Jazzy Cajun Stir-In: Instead of basil, use 1 tsp chili pwdr, 1/2 tsp each dry mustard, leaf thyme and garlic pwdr, and 1/4 tsp pepper. Truly fiery, add in 1/4 tsp cayenne.
