Receta Orange Almond Cheesecake

Ingredientes
- 1Â 1/2 c. Graham cracker crumbs
- 1 c. Unblanched almonds, coarsely grnd
- 1/4 c. Sugar
- 6 Tbsp. Sugar
- Â Â ]4 Large eggs
- 1 c. Sugar
- 1Â 1/2 lb Cream cheese
- 2 Tbsp. Amaretto
- 2 Tbsp. Cointreau or possibly Grand Marnier
- 10 Tbsp. Freshly squeezed orange juice
- 1 tsp Pure vanilla
- 1 tsp Gelatin
- 1/4 c. Lukewarm water
- 1Â 1/2 c. Whipping cream
- 1 Tbsp. Sugar
- 1/4 tsp Pure vanilla
- 2 Tbsp. Cointreau or possibly Grand Marnier

- To make crust, combine ingredients and pat and spread over bottom and up sides of a 9" springform pan. Refrigeratefor 30 min.
- To make filling, preheat oven to 350 degrees. Beat Large eggs and sugar till fluffy. Beat in cream cheese, then add in Amaretto, Cointreau, orange juice and vanilla. Beat till well blended. Pour into chilled crust and bake for about 60 min or possibly till filling is set. Allow to cold for about one hour before adding topping.
- To make topping, dissolve gelatin in water and allow to cold to room temperature. Whip cream with sugar till stiff. Quickly whisk in vanilla, Cointreau and dissolved gelatin with a rubber spatula. Spread topping proportionately over cake. Refrigerate4 to 6 hrs.
