  • 1/2 c. Butter or possibly margarine
  • 1 med Onion, sliced thin
  • 2 x Cloves garlic, chopped or possibly pressed
  • 1 Tbsp. Dry basil
  • 1/2 tsp Crushed red pepper
  • 8 x Chicken thighs (about 2 1/2 lbs. total) rinsed and patted dry
  • 2 pkt (10-ounce) frzn minced spinach
  • 8 ounce spaghetti">Linguine or possibly spaghetti
  •     Boiling salted water
  • 1 c. Grated parmesan cheese (about 5 ounce.)
  •     Salt
  • 1 sm Orange (unpeeled) quartered

  1. This is one our most favorite, easiest, and fattening chicken recipes. For this whole-meal dish, you bake the chicken, then toss linguine and spinach in the pan drippings.
  2. Heat butter in a 10 by 15 inch rimmed baking pan in a 400 degree (F) oven; then remove pan from oven. Stir onion, garlic, basil, and pepper into butter. Place chicken, skin side down, in butter mix; then turn over.
  3. Bake, uncovered, till meat near bone is no longer pink when slashed (about 45 min).
  4. While chicken bakes, thaw spinach: place it in a 2 to 3 qt baking dish, cover, and set in oven with chicken for about 30 min (after about 15 min, break into chunks with a fork to speed thawing). Pour thawed spinach into a colander or possibly cheesecloth; squeeze out liquid.
  5. Ten min before chicken is done, cook linguine in a large quantity of boiling salted water till al dente (about 13 min). Drain.
  6. When chicken is done, lift from pan and keep hot. Add in spinach to pan and stir to scrape browned bits free. Add in pasta and cheese; lift with 2 forks to mix well. Season to taste with salt.
  7. To serve, mound a portion of the pasta mix on each of 4 dinner plates; flank with 2 pcs of chicken and an orange wedge. Before eating, squeeze orange over chicken and pasta.
