- 1 Tbsp. finely-chopped ginger
- 2 Tbsp. finely-chopped shallots
- 1/4 c. rice wine vinegar
- 3 Tbsp. extra-virgin extra virgin olive oil
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 3 ounce salmon caviar
- 3 Tbsp. chopped chives
- 1 x Lotus root thinly sliced
- 2 c. pure vegetable oil
- Â Â Baby greens for serving
Direcciones
- Cut salmon into serving portions. Rub with oil, salt, and pepper. Broil the salmon for 5 to 8 min till just cooked through.
- In a bowl, combine ingredients for the vinaigrette. Mix caviar and chopped chives into the vinaigrette.
- Heat a pot of oil. Fry lotus chips.
