Ingredientes
- Palestinian Lentil Soup - Pots and Pins - Adapted From Several Recipes
- 1 large onion, finely chopped
- 3 to 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon cumin
- 1/2 teaspoon Za'atar
- 1/2 teaspoon ground coriander seed
- 1/4 teaspoon turmeric
- 1/8 teaspoon cinnamon
- 4 cups beef broth, divided
- 4 cups vegetable broth, divided
- 1 tablespoon sea salt
- black pepper to taste
- 1/4 cup long grain rice
- juice of one lemon
- Bring the heat back up, add in the remaining two cups of broth and stir in the rice, and bring to a boil for a
- minute, then reduce the heat to low again, replace the lid, and wait
- until the rice is cooked (about 15-20 minutes). Remove from heat and add salt and pepper to taste. Stir in lemon juice. Makes about 6 servings.
- Homemade Za'atar Spice - From About.com
- 1/4 cup sumac (available at Whole Foods)
- 2 tablespoons thyme
- 1 tablespoon roasted sesame seeds
- 2 tablespoons marjoram
- 2 tablespoons oregano
- 1 teaspoon coarse sea salt
