Receta Pan Fried Crappie Fillets

Ingredientes
- 2 lb crappie fillets
- 1 c. corn meal
- 1 c. flour
- 3 x Large eggs beaten with
- Â Â A little lowfat milk
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- Â Â Peanut oil as needed
Direcciones
- Mix corn meal and flour together in a large zip-seal plastic bag.
- Salt and pepper each fish fillet, dip in egg, then drop in bag and shake till coated with the meal/flour mix.
- Drop fillets in warm peanut oil poured about 1/2-inch deep in a cast-iron skillet. Cook till fillets flake easily with a fork.
