Receta Pan Sauteed Halibut With Curried Corn Sauce, Tomato Chutney

Ingredientes
- 2 Tbsp. ancho chile pwdr
- 1 tsp cayenne
- 1 Tbsp. grnd cumin seed
- 2 Tbsp. grnd coriander seed
- 1 Tbsp. grnd fenugreek seed
- 2 tsp grnd cardamom seed
- 1 Tbsp. turmeric
- 2 tsp grnd ginger
- 1 Tbsp. grnd black peppercorns
- 1 tsp grnd cloves
- 6 x plum tomatoes peeled, diced
- 1/2 c. minced yellow onions
- 2 x garlic cloves finely minced
- 2 Tbsp. light brown sugar
- 1/4 c. white wine vinegar
- 1/4 c. golden brown raisins
- Â Â Salt to taste
- 2 Tbsp. unsalted butter
- 1/2 c. minced red onion
- 1 x green apple peeled, cored,
- Â Â and diced
- 1 Tbsp. chopped garlic
- 3 Tbsp. curry pwdr
- 4 c. fish stock
- 1 c. frzn corn kernels thawed
- 1 c. heavy cream
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 4 x halibut fillets - (6 ounce ea)
- Â Â Extra virgin olive oil as needed
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Direcciones
- Curry Pwdr: In a bowl combine all curry pwdr ingredients.
- Tomato Chutney: In a bowl combine all chutney ingredients.
- Curried Corn Sauce: Heat butter in a medium saucepan over medium heat. Add in onions and green apples and cook till soft. Add in garlic and cook for 1 minute. Add in curry pwdr and cook for 5 min. Add in stock, bring to a boil, reduce heat and simmer for 1 hour.
- Strain stock into a clean medium saucepan. Add in the corn to the stock and cook for 30 min, covered.
- Place the cream in a small saucepan and cook till reduced by half. Add in the reduced cream to the stock and simmer, covered for 10 min. Season with salt and pepper.
- Halibut: Heat a large saute/fry pan or possibly grill pan over high heat. Brush halibut with the oil and season with salt and pepper to taste. Cook the halibut for 3 min on each side. Serve with corn sauce and tomato chutney.
