  1. Cut the passion fruits in half and scoop out all the juice seeds and membranff.
  2. Liquidize the passion fruit pulp and pass through a fine sieve.
  3. Make a sugar syrup by combining the water and sugar in a saucepan bringing it to the boil and simmering it for fiffeen min.
  4. Pour the syrup over the strained pulp.
  5. Leave to cold.
  6. Before turning in an ice cream machine add in a squeeze of lemon juice.
  7. The passion fruit should be deep purple in colour and beginning to shrivel and wither. Which way they will be ripe.
  8. Serves 4
