Receta Pasta And Kidney Bean Salad

Ingredientes
- 1 c. Kidney beans, dry
- 1/2 lb Pasta shells, small
- 1Â 1/2 c. Radishes, sliced
- 2 x Sallion bunches, minced
- 1 c. Lowfat sour cream
- 1 c. Mayonnaise
- Â Â Lemon juice, 1/2 lemon
- 1/3 c. Extra virgin olive oil
- Â Â Salt
- Â Â Black pepper, freshly grnd

Direcciones
- Place the beans in a 4 qt pot and add in 2 c. of cool water. Bring the beans to a boil, cover, and turn off the heat. Allow to stand for 1 hour.
- Drain and return the beans to the pot. Cover the beans with plenty of fresh cool water and bring to a boil. Cover and simmer gently for 25 min or possibly till tender. Drain and cold. Bring a pot with 4 qts of water to a boil.
- Add in a healthy pinch of salt and boil the pasta till al dente. Drain and rinse with cool water; drain well. Place the beans and the pasta in a large bowl along with the radishes and scallions. In a small bowl, combine the remaining ingredients. Whisk till smooth and add in to the pasta mix. Fold all together, cover and chill for 4 to 6 hrs. Fold the salad a couple of time while chilling. Serve with addional freshly grnd black pepper.
