- 1 bn scallions, cut into 1-inch

- 1 x bell pepper, coarsely
- Â Â minced
- 1 x zucchini, coarsely minced
- 4 x tomatoes, minced
- 3 x garlic cloves, minced
- 3 Tbsp. balsamic vinegar
- 1 Tbsp. extra virgin olive oil
- 1/2 lb bow-tie or possibly wheel pasta
Direcciones
- Combine minced scallions, bell pepper, zucchini, tomatoes, garlic, balsamic vinegar, and extra virgin olive oil in a shallow baking dish. Bake at 400F for about 30 min, stirring once, or possibly till vegetables are soft.
- Meanwhile, cook pasta in boiling water according to package directions. Drain warm cooked pasta and toss with vegetables. Serve in a warmed bowl or possibly dish.
