Burfi is a kind of sweet in Indian.In India,we literally make all kinds of 'burfis' depending upon which state,region you come from and what ingredients you toss into your burfi .Here I have for you a very unique yet super easy and very yum burfi made out of Pawpaw.Though seasonal,pawpaws are usually available,all year round in frozen form too.You can use frozen pawpaws also in this recipe.This burfi often draws a lot of attention due to its distinct acquired taste.

  1. Heat butter in a non-stick pan.Add almonds and pistachios and saute for 1-2 mins
  2. Add pawpaw and saute on medium high heat for 5-6 mins.Add msugar,cardamom powder and mix well till sugar dissolves.Cook for 8-10 mins it looks a bit thin and syrupy.
  3. Add ricotta and cook for 1-2 mins.Switch off the ehat and keep stirring for 8-10 mins o medium heat till the mixture cools down a bit.
  4. Line an aluminium tray with a cling film.Pour the mixture into the tray and let it set at room temperature for 1 hour and then in the refrigerator for 3-4 hours.
  5. Cut into squares.Serve warm or cold.
