- 1 1/2 C. heavy whipping cream
- 2 large very ripe pears, peeled and thinly sliced
- 1/2 C. sugar
- 1/2 C. milk
- 1 vanilla bean, scraped

%20for%20another%20two%20minutes.%20%20The%20color%20should%20be%20a%20rich%20brown.%3C/p%3E%3Cp%3ERemove%20the%20pan%20from%20the%20heat%20and%20carefully%20add%201/3%20cup%20of%20warm%20water.%20%20The%20caramel%20will%20sputter%20and%20steam%20as%20it%20hardens.%20%20Return%20the%20pan%20to%20very%20low%20heat,%20stirring%20constantly,%20until%20caramel%20is%20liquid%20again.%20Add%20the%20pears%20to%20the%20pan%20and%20stir%20constantly,%20cooking%20until%20soft,%20about%203-4%20minutes.%20%20%20Take%20off%20the%20stove%20and%20use%20a%20slotted%20spoon%20to%20remove%20the%20pears,%20allowing%20the%20caramel%20to%20drip%20back%20off%20into%20the%20pan.%20%20%20Puree%20the%20pears%20in%20a%20food%20processor%20or%20blender%20until%20relatively%20smooth.%20%20Set%20aside.%3C/p%3E%3Cp%3EPut%20the%20half%20cup%20of%20sugar,%20cream,%20milk%20and%20vanilla%20scrapings/pod%20%20in%20a%20medium%20saucepan%20and%20heat%20over%20medium%20until%20sugar%20is%20dissolved%20and%20the%20mixture%20is%20warm.%20%20Fish%20out%20the%20vanilla%20pod%20and%20discard.%20%20Using%20an%20electric%20mixer,%20whip%20the%20cream%20mixture%20for%20several%20minutes%20until%20the%20mixture%20thickens%20and%20you%20notice%20an%20increase%20in%20volume.%3C/p%3E%3Cp%3EFold%20in%20the%20pureed%20pears%20and%20half%20of%20the%20slightly%20cooled%20caramel.%20%20Pour%20the%20mixture%20into%20your%20ice%20cream%20machine%20and%20freeze%20according%20to%20manufacturer%E2%80%99s%20directions.%20%20Just%20before%20removing%20the%20ice%20cream%20from%20the%20machine,%20drizzle%20in%20the%20remaining%20caramel%20and%20allow%20it%20to%20mix%20in%20slightly%20for%20about%2030%20seconds.%20%20Put%20ice%20cream%20in%20an%20air-tight%20container%20and%20place%20in%20your%20refrigerator%20freezer%20until%20firm.%3C/p%3E%3Cp%3E(makes%201%20quart)%3C/p%3E%3Cp%3EEntry%20filed%20under:%20Cookbook%20Reviews,%20Recipes,%20Sweet%20Treats.%20Tags:%20cooking,%20food,%20ice%20cream,%20recipe.%3C/p%3E){kind=link}
