Receta Pear, Rocket And Watercress Salad

Ingredientes
- 1 bn Watercress
- 3 x Handfuls rocket
- 2 x Desert pears - peeled and cored
- 6 x Spring onions
- 4 x Radishes - thinly sliced
- 30 gm Roasted and skinned walnut pcs, (1oz)
- 1 x Lemon
- 1 x Clove garlic
- 4 Tbsp. Extra virgin olive oil
- 2 Tbsp. Walnut oil
- 1 tsp Caster sugar
- Â Â Freshly grnd salt and black pepper
Direcciones
- Prepare the dressing ahead of time for the flavours to develop and store in the fridge. Pare a strip of lemon zest, squeeze juice and place both in a bowl.
- Crush the garlic and add in to the lemon with the oils, sugar and seasoning.
- Whisk till blended and store.
- Wash and dry watercress and rocket, slice pears, radishes and spring onions. Add in the roasted walnut pcs and mix all together in a large bowl.
- Remove lemon zest from dressing. Drizzle dressing over salad and toss lightly. Serve in a pretty glass bowl.
