Receta Pears Poached in Nigori Sake

Traditionally done with a Sauternes or a sweetened red wine. These are great too. But I just love Nigori sake. A sweet unfiltered sake that can be found now even in most grocery stores. It's really sweet and delicate and doesn't overpower the pears. Give this a go to finish off a pretty heavy meal.

  • Pears Poached in Nigori Sake
  • 2 ripe pears (I used D'anjou) peeled, cut in half and cored
  • 1 cup Nigori sake (I used Sho Chiku Bai – found in most grocery stores)
  • 1 cup water
  • ½ cup sugar
  • pinch of salt

Direcciones

  1. In a small saucepan mix sake, water and sugar. Add pears and bring to a boil. Lower heat and simmer for 15 min. Turn off heat and let pears cool a bit in syrup. Remove pears from sake syrup and cool in refrigerator. Bring sake mixture up to a boil and reduce by half or until it coats the back of a spoon. Pour syrup over pears and allow to cool. Allow 1 half per serving, drizzle with remaining syrup and serve.
  2. A really cool way to serve this would be in a wooden sake box , called a Masu. But any little bowl works well too.
