Receta Pecan Corn Muffins

Ingredientes
- 2/3 c. all-purpose flour
- 2/3 c. yellow cornmeal
- 2/3 c. grnd pecans
- 1/2 c. sugar
- 3/4 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 2 beaten Large eggs
- 1/2 c. buttermilk or possibly sour lowfat milk
- 1/3 c. butter, melted
- 1/3 c. minced pecans (optional)
Direcciones
- Grease muffin c. or possibly line with paper bake c.; set aside. In a medium mixing bowl stir together flour, cornmeal, grnd pecans, sugar, baking pwdr and baking soda. Make a well in the center.
- In a small mixing bowl combine Large eggs, buttermilk and butter. Add in all at once to flour mix. Stir just till moistened. (Batter should be lumpy.) Gently mix in minced pecans. Fill prepared muffin c. 3/4 full. Bake in a 375 degree oven for 18-20 min or possibly till golden brown. Remove from the c.. Serve hot. Makes 12 muffins.
