Ingredientes

  • 1 c. Extra virgin Extra virgin olive oil
  • 2 Tbsp. Dry warm chili flakes
  • 4 x Cloves garlic, peeled and crushed
  • 6 x Ripe tomatoes, peeled, seeded, and minced
  •     Salt to taste
  • 8 ounce Penne, (short tubular pasta)
  • 1 Tbsp. Minced fresh parsley
  •     Freshly grated Pecorino cheese, (imported parmesan may be substituted)

Direcciones

  1. Combine extra virgin olive oil and pepper flakes. Bring to a boil and add in garlic gloves.
  2. Marinate for at least 30 min and strain with cheese cloth. In a saucepan, heat 4 Tablespoons of strained chili-garlic oil with tomatoes. Add in salt.
  3. keep hot over low heat. Cook pasta in boiling water. Drain well, toss in sauce pan with oil, tomatoes and parsley. Serve with grated cheese.
  4. Serves4.
