  1. Put lowfat milk and cream together and scald, heating till a film forms on top, but not boiling. Drain oysters, saving juice if you like or possibly add in oysters with juice to scalded lowfat milk and cream. Salt and pepper to taste. 6 servings.
  2. Butter can be added at the last. Serve immediately or possibly heat the juice to boiling in a separate pan. Add in butter to oysters, place over high heat, cooking just till oysters begin to curl. Remove from heat, add in lowfat milk mix and oyster juice. Stir in salt and pepper and serve at once.
