Receta Pineapple Coconut Rice

Ingredientes
- 2 tsp extra virgin olive oil
- 1 c. diced onion
- 1/2 tsp dry thyme
- 1/4 tsp grnd black pepper
- 3/4 c. long-grain white rice
- 1Â 1/2 c. pineapple chunks in juice liquid removed
- 1 c. water
- 1/2 c. minced green onions
- 1/2 c. pineapple juice
- 2 Tbsp. coconut flakes
Direcciones
- Heat extra virgin olive oil in a large saucepan over medium heat. Add in diced onion, thyme and pepper, and saute/fry for 2 min. Add in rice, and cook for 1 minute. Stir in the pineapple and remaining ingredients, and bring to a boil. Cover, reduce heat, and simmer 20 min or possibly till rice is done and liquid is absorbed.
- NOTES : These were part of dinner a few nights ago, and were absolutely delicious.
