Receta Pinoy Arroz Caldo (Chicken Porridge)

This is one of the tasty dishes served in the morning on many Filipino dining table. There are several variety of this recipe but I would always enjoy the basic and original one. Try it.

  • 5 cloves garlic
  • 4 tbsp olive oil
  • 2 small ginger (peeled and cut into thin strips)
  • 1 small onion (diced)
  • 2 cups of white Japanese or Basmati rice
  • A mix of 10 chicken drumsticks and wings OR 5-6 regular size thighs (chicken parts matter for its taste)
  • 5 tbsp fish sauce
  • 1/2 tsp saffron
  • Salt and pepper
  • Pinoy lemon (calamansi)
  • Spring onions (sliced)
  • chopped scallions (for garnish)

Direcciones

  1. In a large stock pot, saute the onion, garlic and ginger over medium heat until onion starts to become transparent, about 5-7 minutes.
  2. Add chicken, patis/fish sauce and pepper.
  3. When the chicken is cooked, add chicken stock and rice.
  4. Bring to a boil, then lower heat to simmer.
  5. Cover and continue to cook until chicken is very tender and the rice is fluffed and cooked, about 20 minutes.
  6. Stir frequently and adjust seasoning as necessary.
  7. Top with spring onions and garlic bits.
  8. Serve with calamansi on the side.
  9. *Hardboiled Egg is optional.
