I'm sure everyone has their favorite home made pizza recipe. This is my variation. I've tried several and narrowed to what I have listed here.

This makes two 12 inch pizzas.

Read entire process before starting. For best results refrigerate the dough for 24 hrs. The sauce originally was supposed to be refrigerated for 1 hrs, but I have found that its taste is enhances after being in the fridge for 24 hrs.

When preheating the oven place the pizza stone on the top rack of the oven. If you don’t have a pizza peel, use the back of a cookie sheet. I would highly recommend purchasing a pizza peel if you plan on making this regularly.

  1. Pizza Dough
  2. -Mix together in a food processor:
  3. -16 ½ oz – bread flour
  4. -2- tsp sugar
  5. -½- tsp yeast
  6. While processing, pour 1 1/3 cup of ice cold water into processor just until the dough starts to come together. Let the dough rest for 10 mins. This will let everything come together.
  7. Add:
  8. -1 ½- tsp table salt
  9. -1- Tblsp vegetable oil
  10. Process dough for 30-60 seconds until the dough looks satiny and is sticky.
  11. Pour out dough out onto an oiled counter and kneed for about 1 minute.
  12. Place in a glass bowl and cover tightly with plastic wrap.
  13. Refrigerate for 24 hrs.
  14. Pizza Sauce
  15. Mix together in a food processor and refrigerate for at least 1 hr:
  16. -1- 28 oz can whole tomatoes (drained)
  17. -1- Tblsp extra virgin olive oil
  18. -2- minced garlic cloves
  19. -1- tsp salt
  20. -1- tsp dried oregano
  21. -1- tsp black pepper
  22. -1- tsp red wine vinegar
  23. 1 hr prior to pizza making do the following:
  24. Cut dough into 2 equal rounds. Place them on a lightly oiled cookie sheet and cover with plastic wrap and let them rest for 1 hr. Preheat oven at 500 degrees.
  25. Now you are ready to put the pizza together. You have let everything preheat and rest and refrigerate for an hr.
  26. Stretch one dough round into about a 12 inch circle on your floured pizza peel or similar device.
  27. -Spread ½ cup of pizza sauce on the dough. A ladle works great and is about ½ cup.
  28. -Spread ½ cup of parmesan cheese over sauce.
  29. -Spread 1 cup ONLY mozzarella cheese over the parm cheese.
  30. Place the pizza onto the pizza stone carefully as to not spill the ingredients all over the oven using little shakes.
  31. Bake for 10-12 mins until the bottom is nice and brown rotating half way through.
  32. -Spread fresh cut basil leaves all over the pizza.
  33. ENJOY!
