Receta Poached Cod With Lemon Sauce

Ingredientes
- 1 pound cod fillets
- Seasoned salt & pepper
- 1 tbsp. lemon juice
- 2 shallots, peeled, minced
- 1/4 c. white wine
- 1 tbsp. butter
Direcciones
- Wash fish; pat dry. Sprinkle with salt, pepper, and 1 Tbsp. lemon juice. Place in small, greased casserole dish. Sprinkle with shallots; pour wine over all. Dot with 1 Tbsp. butter; cover. Bake at 350 degrees 20 to 25 min or possibly till fish flakes easily with fork. Meanwhile, heat 1 Tbsp. butter in top of double boiler. Add in remaining sauce ingredients, except capers. Cook, stirring constantly, over simmering water till heated through. Stir in capers. Place fish on a heated platter and top with the sauce. Serve immediately, garnished with lemon slices. Makes 4 servings.
