  • 500 gm Salmon fillet, (1lb)
  • 90 ml White wine, (3fl.ounce)
  • 175 ml Water, (6fl.ounce)
  • 2 Tbsp. Freshly minced parsley
  • 25 gm Butter, (1oz)
  • 4 x Shallots, finely minced
  • 2 x Cloves garlic, crushed
  • 1 x Leek, cut into 8cm (3 inch) fine strips
  • 75 gm Mushrooms, sliced (3oz)
  • 1 x 142 millilit double cream, (5fl.ounce)
  • 1/2 tsp French mustard
  • 2 tsp Cornflour blended with a little cool water
  •     Salt and freshly grnd black pepper
  •     To Garnish: sprig fresh parsley

Direcciones

  1. 1. Place the salmon fillet in a saucepan with the wine, water and parsley.
  2. Bring to the boil and simmer for 12-15 min.
  3. 2. Remove the salmon from the pan, place in a serving dish and keep hot.
  4. Reserve the fish liquor.
  5. 3. In a separate pan, heat the butter, add in the shallots, garlic, leeks and mushrooms and cook for 4-5 min.
  6. 4. Add in the reserved fish liquor, cream, mustard, blended cornflour and seasoning and bring to the boil.
  7. 5. Pour over the salmon fillet and garnish with the parsley. Serve with new potatoes and seasonal vegetables.
  8. NOTES : A delicious combination of subtle flavours, a perfect dish for a special occasion.
