- Large handful baby spinach
- small head of red leaf lettuce, chopped
- In small bowl mix dressing:
- 1 tsp. olive oil
- 1 tsp. balsamic vinegar
- 1 tsp. spicy brown mustard-prepared">mustard or dijon mustard-prepared">mustard
