Receta Pork With Apples And Cabbage

Ingredientes
- Â Â Vegetable cooking spray
- 2 Tbsp. honey mustard
- 1 x (1 lb.) pork tenderloin
- 3/4 tsp freshly grnd pepper, divided
- 1/4 tsp thyme
- 3 x Golden brown Delicious apples, cored and sliced
- 2 tsp vegetable oil
- 1 med onion, sliced
- 8 c. thinly sliced green cabbage
- 1 c. bulgur
- 1Â 3/4 c. water
- 1 tsp salt
- 1 pch allspice
- 1/4 c. apple juice or possibly water
- Â Â Fresh thyme sprigs, for garnish

- 1. Heat oven to 425 degrees. Coat jelly-roll pan with vegetable cooking spray. Spread mustard over pork; sprinkle with 1/4 tsp. pepper and thyme. Arrange in pan; surround with apples.
- 2. Roast 30 to 40 min (depending on thickness of tenderloin) till instant-read meat thermometer inserted in center of meat reaches 155 degrees.
- 3. Meanwhile, heat oil in 12-inch nonstick skillet over medium-high heat.
- Add in onion and cook, stirring, 8 to 10 min, till golden brown. Add in cabbage, bulgur, water, salt, remaining 1/2 tsp. pepper and allspice. Reduce heat to low; cover and simmer 20 min, till bulgur is tender.
- 4. Transfer pork to cutting board; keep hot. Add in apple juice to apples in pan, stirring to scrape up any browned bits. Serve pork with cabbage-bulgurpilaf and apple mix. Garnish with thyme, if you like.
- Makes 4 servings.
- Pork tenderloin is the leanest and most tender of the pork cuts. Apples and cabbage complete the dish for a great dinner.
