  • 1 1/2 lb Pork -- 1 inch cubes
  • 1/2 pt Dry white wine
  • 2 tsp Paprika
  • 1 x Bay leaf
  • 2 x Clove
  •     Salt and pepper -- to taste
  • 5 x Cloves garlic -- crushed
  • 2 ounce Margarine
  • 2 x Onion -- sliced
  • 4 med Tomatoes -- minced
  • 2 lb Clams
  • 4 Tbsp. Coriander -- minced
  • 2 Tbsp. Parsley -- minced
  • 1 x Lemon -- quartered
  •     Forgarnish

Direcciones

  1. Step 1:Put cubed pork in a dish and add in the wine, paprika, bayleaf, cloves, pepper and salt and the equivalent of 3 of the crushed garlic cloves.
  2. Cover and leave, refrigerated, overnight, turning occasionally.
  3. Step 2:In a large saucepan, heat 1 oz of margarine, add in the onions, the tomatoes and the rest of the garlic and cook gently till the onions are soft. (Add in salt and pepper to taste).
  4. Step 3:Wash the clams( discarding any which are open) and add in them to the onion/tomato mix. Cover and cook on high heat till all have opened
  5. (about 5 min), then cook for another minute.
  6. Step 4:Meanwhile drain the pork, keeping the marinade. Heat the rest of the margarine in a large frying pan, add in the pork and brown on all sides over medium heat. Add in the marinade and continue to cook till there is very little liquid.
  7. Step 5:Serve the pork, the clams in their shells and the onion mix with boiled potatoes, sprinkling everythin with coriander and parsley and garnishing with lemon quarters.
