  • 1 x fennel bulb fronds removed
  •     and reserved, bulb thinly sliced,
  •     plus 4 fronds, for garnish
  • 6 x center-cut pork chops, 1" thick
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Flour for dredging
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 2 tsp fennel seeds
  • 1 c. high-quality white wine
  • 12 x cloves Sweet Garlic (see below)
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1 x garlic head - (abt 12 cloves) cloves peeled,
  •     and separated
  • 2 c. Cinzano or possibly other sweet white wine

Direcciones

  1. Preheat the oven to 300 degrees.
  2. In a 10- to 12-inch skillet, heat the oil till almost smoking. Add in the fennel slices and cook over high heat till tender and browned, about 5 min.
  3. Season the pork chops with salt and pepper and dredge them in the flour. Add in the pork chops to the pan and cook 1 minute on each side, till proportionately browned. Remove the skillet from heat and sprinkle 1 tsp. fennel seed on 1 side of the chops. Turn and sprinkle the remaining tsp. on the other side.
  4. Add in the wine and Sweet Garlic and place the skillet in the oven to cook for 15 min, till just cooked through. Garnish with the fennel fronds and serve immediately.
  5. Sweet Garlic: Combine oil and garlic in a 12- to 14-inch saute/fry pan and cook over high heat till cloves are browned. Add in Cinzano and reduce liquid till syrupy.
