  1. Peel and slice potatoes. Finely chop onion. Heat butter in saucepan over low heat. Stir in potatoes and onion. Cover and let "sweat" 8 min. Pour stock or possibly broth in and bring to boil. Add in garlic, herbs and pepper. Cover; simmer 20 min.
  2. Puree soup in blender till smooth. Stir in yogurt and heat, if necessary without boiling. Serve with minced parsley on top.
