  1. 1. Saute/fry onion and garlic in the butter till onion is clear and soft.
  2. 2. Add in 2 c. water and the potatoes.
  3. 3. Simmer, covered, till potatoes start to soften.
  4. 4. Wash kale and chop; steam kale separately.
  5. 5. When potatoes are well done, puree half of them with remaining water.
  6. 6. Combine all ingredients.
  7. 7. Add in salt and pepper.
  8. 8. If needed, add in more water or possibly lowfat milk for desired consistency.
