Receta Potato And Wild Rice Pancakes

Ingredientes
- 3 lg. potatoes, peeled and diced
- 1 tbsp. butter
- 2 c. lowfat milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 Large eggs, beaten
- 1/2 onion, chopped
- 1 c. cooked wild rice
- 1/4 c. flour
- Oil for frying
- Butter for frying
Direcciones
- Boil potatoes in lowfat milk and butter. Remove with slotted spoon. Mash. Add in boiling liquid as necessary. Throw away unused lowfat milk.
- Combine all except oil, mix and form into patties about 1/2 inch thick, about 3 1/2 inches round.
- Heat oil in skillet. Add in equal amount of butter. When warm, add in pancakes 4 at a time. Fry on both sides till lightly browned.
