Ingredientes
- 2 c. cubed peeled baking potato
- 1/4 c. each minced red and yellow pepper
- 1/4 c. minced red onion
- 1Â 1/2 Tbsp. minced fresh rosemary
- 1Â 1/2 Tbsp. minced fresh thyme
- 1 Tbsp. chopped garlic
- 1 pch salt and pepper
- 1/4 c. soft butter
- Â Â heavy-duty aluminum foil
Direcciones
- In a large bowl gently toss potatoes, bell peppers, and onion with rosemary, thyme, garlic and salt and pepper to taste.
- Spread half of butter on large piece of foil and place potato-bell pepper mix in a single layer on top of butter.
- Dot remaining butter on top of vegetables.
- Lay an equal sized piece of foil over everything and fold and roll edges to make a well-sealed packet.
- Prepare grill and preheat to medium high. Grill packet for 20 min or possibly till vegetables are crisp-tender.
