  • 2 c. cubed peeled baking potato
  • 1/4 c. each minced red and yellow pepper
  • 1/4 c. minced red onion
  • 1 1/2 Tbsp. minced fresh rosemary
  • 1 1/2 Tbsp. minced fresh thyme
  • 1 Tbsp. chopped garlic
  • 1 pch salt and pepper
  • 1/4 c. soft butter
  •     heavy-duty aluminum foil

Direcciones

  1. In a large bowl gently toss potatoes, bell peppers, and onion with rosemary, thyme, garlic and salt and pepper to taste.
  2. Spread half of butter on large piece of foil and place potato-bell pepper mix in a single layer on top of butter.
  3. Dot remaining butter on top of vegetables.
  4. Lay an equal sized piece of foil over everything and fold and roll edges to make a well-sealed packet.
  5. Prepare grill and preheat to medium high. Grill packet for 20 min or possibly till vegetables are crisp-tender.
