%20before%20individually%20wrapping%20them%20in%20more%20plastic%20wrap.%3C/p%3E%3Cp%3ECheck%20out%20the%20other%20PPQ%20members%E2%80%99%20take%20on%20American%20Beauty%20Cake.%20Thanks%20to%20all%20those%20who%E2%80%99ve%20baked%20and%20followed%20along%20with%20the%20project%20over%20the%20last%20couple%20of%20years.%20It%20has%20been%20fun.%3C/p%3E%3Cp%3EI%E2%80%99ve%20already%20started%20to%20work%20up%20a%20fun%20twist%20for%20Project%20Pastry%20Queen,%20Part%20Deux.%20Stay%20tuned%3C/p%3E%3Cp%3EAmerican%20Beauty%20Cake%3C/p%3E%3Cp%3EAn%20intensely%20rich%20flourless%20chocolate%20cake,%20topped%20with%20mousse%20and%20a%20chocolate%20glaze.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EMake%20the%20cake:Preheat%20oven%20to%20350.%3C/p%3E%3Cp%3ELine%20the%20bottom%20of%20a%209-inch%20sprinform%20pan%20(outside%20wrapped%20with%20a%20triple%20layer%20of%20foil%20to%20protect%20from%20leaks%20in%20the%20waterbath)%20with%20a%20parchment%20round%20and%20lightly%20spray%20the%20bottom/sides%20with%20baking%20spray.%3C/p%3E%3Cp%3EMelt%20the%20butter%20and%20chocolate%20in%20the%20microwave%20in%20a%20large%20bowl,%20on%2030-second%20intervals%20until%20melted.%3C/p%3E%3Cp%3EWhisk%20in%20the%20eggs%20and%20sugar%20until%20well%20combined.%3C/p%3E%3Cp%3EStir%20in%20the%20vanilla%20and%20liqueur%20and%20then%20pour%20the%20batter%20into%20the%20prepared%20pan.%3C/p%3E%3Cp%3EPlace%20the%20pan%20in%20a%20larger%20pan%20(like%20a%2013x9)%20and%20fill%20the%20larger%20pan%20with%20enough%20hot%20water%20to%20come%20up%20level%20with%20the%20batter.%3C/p%3E%3Cp%3EBake%2035-40%20minutes,%20until%20firm%20to%20the%20touch,%20and%20then%20remove%20from%20the%20oven%20(but%20let%20cool%20completely%20in%20the%20waterbath).%3C/p%3E%3Cp%3EAfter%20the%20cake%20cooled,%20I%20cut%20~4-inch%20wide%20strips%20of%20parchment%20and%20lined%20the%20sides%20of%20the%20springform%20pan,%20pushing%20the%20parchment%20down%20between%20the%20cake%20and%20sides%20(shrinkage%20made%20this%20possible).%20This%20helped%20with%20removal%20later.%3C/p%3E%3Cp%3EMake%20the%20mousse:Melt%20butter%20and%20chocolate%20in%20the%20microwave,%20stirring%20until%20smooth;%20set%20aside%20to%20cool.%3C/p%3E%3Cp%3EWhisk%20the%20yolks,%20sugar,%20and%20vanilla%20together%20until%20smooth%20and%20then%20whisk%20in%20the%20chocolate%20mixture.%3C/p%3E%3Cp%3EUsing%20a%20mixer,%20whisk%20the%20whites%20until%20stiff%20peaks%20form.%3C/p%3E%3Cp%3EFold%20the%20egg%20whites%20in%203%20batches%20into%20the%20chocolate.%20Once%20an%20addition%20is%20almost%20completely%20incorporated,%20add%20the%20next.%20The%20texture%20will%20look%20completely%20questionable%20but%20keep%20going.%20It%20gets%20better.%3C/p%3E%3Cp%3EPlace%20the%20cream%20into%20the%20mixer%20bowl%20and%20whip%20that%20just%20until%20soft%20peaks%20start%20to%20form.%3C/p%3E%3Cp%3EFold%20the%20whipped%20cream%20into%20the%20mousse%20mixture%20until%20the%20texture%20is%20uniform%20-%20you'll%20fold%20this%20much,%20much%20more%20than%20a%20more%20traditional%20mousse.%3C/p%3E%3Cp%3ESpread%20the%20mousse%20over%20the%20cooled%20cake,%20wrap%20the%20top%20with%20foil,%20and%20freeze%20overnight%20(at%20least%206%20hours).%3C/p%3E%3Cp%3EMake%20the%20glaze:In%20a%20small%20sauce%20pan,%20bring%20corn%20syrup%20and%20cream%20just%20to%20a%20boil.%3C/p%3E%3Cp%3ETurn%20off%20the%20heat%20and%20add%20the%20vanilla%20and%20chocolate.%3C/p%3E%3Cp%3EWhisk%20until%20smooth%20and%20then%20let%20sit%20in%20the%20pan%20for%2030%20minutes%20to%20cool%20and%20thicken.%3C/p%3E%3Cp%3ERemove%20the%20cake%20from%20the%20freezer%20and%20turn%20it%20out%20onto%20a%20rack%20set%20on%20a%20baking%20sheet%20or%20on%20a%20cake%20plate,%20mousse-side%20on%20top%20-%20remove%20the%20ring%20and%20peel%20off%20the%20parchment%20sides.%3C/p%3E%3Cp%3EPour%20the%20glaze%20into%20the%20center%20of%20the%20cake,%20letting%20it%20flood%20the%20top%20and%20run%20down%20the%20edges%20(it%20won't%20cover%20the%20sides%20completely).%3C/p%3E%3Cp%3EI%20put%20the%20cake%20in%20the%20fridge%20to%20set%20the%20glaze%20and%20then%20cut%20pieces%20for%20the%20freezer.%3C/p%3E%3Cp%3ETo%20freeze%20the%20whole%20cake,%20chill%20the%20cake%20to%20set%20the%20glaze%20and%20then%20wrap%20with%20plastic%20wrap%20and%20freeze.%3C/p%3E%3Cp%3EThe%20cake%20is%20recommended%20as%20best-served%20just%20minutes%20out%20of%20the%20freezer.%3C/p%3E%3Cp%3ENotes%3C/p%3E%3Cp%3EYields:%2014-16%20slices%3C/p%3E%3Cp%3ESource:%20The%20Pastry%20Queen%3C/p%3E%3Cp%3EEstimated%20time:%208%20hours%3C/p%3E){kind=link}
