Receta Pumpkin Potato Curry

Ingredientes
- 3 x Garlic cloves, chopped
- 1/4 c. Onion, chopped
- 3 Tbsp. Soy sauce for saute/fry
- 1 tsp Curry pwdr
- 1/2 tsp Fenugreek
- 1/2 tsp Garam masala
- 3 c. Fresh pumpkin or possibly squash puree
- 2 c. Vegetable broth
- 2 med White potatoes, minced in small cubes
- 3 c. Fresh pumpkin chunks
- 2 lb Fresh or possibly frzn peas
- Â Â Salt & pepper
Direcciones
- Saute/fry garlic & onions in soy sauce 'til they release their aromas, about three to five min. Add in spices, cook till their aroma is released, two to three min. Add in the puree and broth, chunks of one potato and all pumpkin chunks. Cook 'til potato chunks are tender, about 15 min, then puree the whole pan. Put back in pan. Add in more broth if needed. Add in the chunks from the second potato, cook 'til tender. Add in the peas right before serving, just to hot them.
