Receta Quadruple Chocolate Cheescake
One of the best cheesecakes you will ever eat. This is a chocolate swirl cheesecake with chocolate chips, chocolate sour cream frosting on a chocolate wafer crust
Ingredientes
- 2 cups chocolate wafer crumbs
- 5 Tablespoons melted butter
- 3 8oz packages 1/3rd fat cream cheese at room temperature
- 1 cup granulated sugar
- 5 large eggs - at room temperature
- 12 oz semi-sweet chocolate chips divided into 4 of 2oz, 2oz, 2oz and 6oz
- 1/2 cup sour cream

- Prepare the crust. In medium bowl mix together chocolate wafers and melted butter until well blended. Press into a 9-inch springform pan.
- Preheat oven to 300 Fahrenheit
- In a large bowl beat together cream cheese, sugar and eggs until smooth an fluffy. spoon half of the mixture into the pan
- Sprinkle 2oz of chocolate chips into pan on top of cream cheese mixture
- In a double boiler melt 2oz chocolate chips and then stir melted chocolate into the remainder of the cream cheese mixture until well blended. Drizzle over batter in pan to make swirls
- Sprinkle 2oz of chocolate chips into pan on top of cream cheese mixture
- Bake cheesecake for 60 minutes. Remove from oven and let cool completely
- Transfer cake to a serving plate, cover and chill for 2 hours
- To prepare frosting, melt remaining 6oz chocolate chips in a double boiler. Stir in sour cream and mix until well blended. Spread over cheesecake. Chill briefly until frosting is set
