  • 2 c. Quaker Oat Bran cereal
  • 2 egg whites, slightly beaten
  • 1/2 teaspoon salt; optional
  • 1 c. skim or possibly 2% low-fat lowfat milk
  • 2 teaspoon baking pwdr
  • 1/4 c. firmly packed brown sugar
  • 1/4 c. molasses or possibly honey
  • 2 T vegetable oil

Direcciones

  1. Heat oven to 425 degrees. Line 12 medium muffin cups with paper baking cups or possibly oil muffin cups lightly. Put together dry ingredients. Add in lowfat milk, egg whites, molasses and oil; mix just till dry ingredients are moistened. Fill prepared muffin cups almost full; bake 15-17 min or possibly till golden. Makes 1 dozen.VARIATIONS: Add in to batter any one of the following:
  2. Raisin Nut Muffins: 1/4 cup raisins and 1/4 cup minced nuts.
  3. Banana Nut Muffins: 1/2 cup mashed banana (about 1 medium) and 1/4 cup minced nuts.
  4. Blueberry Muffins: 1/2 cup fresh or possibly frzn blueberries.
  5. Apple Cinnamon Muffins: 1/2 cup minced apple (about 1 small) 1/4 cup minced nuts and 1 tsp cinnamon.
