Receta Quick Chicken Tortellini Soup

Ingredientes
- 3 x garlic cloves minced
- 2 Tbsp. extra virgin olive oil
- 8 c. chicken broth
- 1 tsp Italian seasoning
- 1 lb chicken tortellini
- 10 ounce fresh spinach thinly sliced
- Â Â (about 6 c.)
- 1/4 c. grated Parmesan cheese
- Â Â Freshly-grnd black pepper to taste
Direcciones
- In a large saucepan, cook garlic in extra virgin olive oil over medium heat till fragrant, 1 to 2 min. Add in chicken broth and Italian seasoning, bring to a boil over high heat. Add in tortellini, reduce heat to medium and simmer, partially covered, till pasta is tender but still hard, about 10 min.
- Add in spinach and simmer till wilted, about 2 min. Stir in cheese and season with pepper to taste. Serve at once.
- This recipe yields 4 servings.
- Comments: Frzn chicken tortellini are a great convenience food.
