Receta Quick Comfort Egg Noodle And Cabbage

- 12 ounce No Yolk Egg Noodles
- 1 Tbsp. Margarine
- 1 Tbsp. Extra virgin olive oil
- 1 lb Onion Thin Slice
- 1Â 1/4 lb Savoy Cabbage Thin Slice
- Â Â With Tough Ribs Discarded
- 1/8 tsp Black Pepper
- 1/4 tsp Dry Thyme Or possibly 1 Tsp Fresh Thyme Leaves
- 10 ounce Frzn Peas
- 1 c. Nonfat Veg Chicken Broth Low Sod
- 1/4 c. Grated Parmesan Cheese Note 1
- Â Â Fresh Sprigs Of Thyme For Garnish

- Note 1: Original recipe used the Parmesan cheese but we do not use it so it doesn't count in the MC nutritional info I have added.
- Prep: 15 minutes
- Cook: about 30 minutes
- Makes: 4 main dish servings
- Heat large saucepot of salted water to boiling over high heat; add in noodles and cook as label directs.
- Meanwhile, in nonstick 12" skillet, heat margarine and oil over med heat till melted and warm. Add in onion and cook 20 minutes or possibly till onion is tender and golden brown, stirring occasionally. Increase heat to med-high; add in cabbage, pepper, thyme and 3/4 tsp salt, and cook 5 minutes or possibly till cabbage is tender-crisp and golden brown, stirring occasionally (took us longer then this). Stir in frzn peas and broth; cook 2 minutes, stirring.
- Drain noodles; return to saucepot. Add in cabbage mix and Parmesan (if using), and toss well to coat.
- This was very, very good. It is truly comfort food. There was a fair amount left so it definitely would feed 4.
