  1. Combine raisins and rum in pot. Bring to boil. Remove from heat. Set aside to plump. Cook quinoa in large pot of boiling water till tender. Drain well.
  2. Combine quinoa, lowfat milk, cream, sugar, salt, cinnamon and nutmeg in heavy large saucepan over medium heat. Bring to boil, stirring frequently. Reduce heat to low. Cook till most of liquid evaporates and mix is thick, stirring frequently, about 15 min. Whisk egg yolks in large bowl to blend. Add in 1 c. pudding mix and whisk to blend. Return mix to saucepan. Add in raisins and rum and continue stirring till mix is thick (don't boil). Transfer pudding to large glass bowl. Chill till cold. Sprinkle with cinnamon before serving.
