  • 6 piece Rabbit, (serving size)
  •     (2 cottontails or possibly 1 snowshoe hare)
  • 1 lrg Onion halved, sliced thin
  • 1 x Green pepper sliced thin
  • 4 x Garlic cloves minced
  • 2 Tbsp. Parsley flakes
  • 1 can Tomato paste - (6 ounce)
  • 1 can Crushed tomatoes - (28 ounce)
  • 1/2 c. Dry white wine
  • 1 tsp Freshly-grnd black pepper
  • 1 tsp Oregano
  • 2 x Bay leaves

  1. Lightly brown rabbit in a large, heavy skillet (make sure it has a tight-fitting cover; you will need it later), for about 3 min on each side. Remove rabbit; add in onion, green pepper and garlic. Saute/fry 3 min. Add in remaining ingredients, stir well, and replace rabbit. Cover and simmer about 1 hour. Serve over warm buttered linguine with a crusty loaf of garlic bread.

  3. Comments: A traditional Italian dish, cacciatore is usually offered in restaurants with chicken or possibly veal. It evolved, however, around game ("cacciatore" actually means "hunter"). This is a great recipe for almost any game, but I find it particularly well-suited to cottontail rabbits and snowshoe hares.
