Receta Rabbit Cacciatore I

Ingredientes
- 6 piece Rabbit, (serving size)
- Â Â (2 cottontails or possibly 1 snowshoe hare)
- 1 lrg Onion halved, sliced thin
- 1 x Green pepper sliced thin
- 4 x Garlic cloves minced
- 2 Tbsp. Parsley flakes
- 1 can Tomato paste - (6 ounce)
- 1 can Crushed tomatoes - (28 ounce)
- 1/2 c. Dry white wine
- 1 tsp Freshly-grnd black pepper
- 1 tsp Oregano
- 2 x Bay leaves
Direcciones
- Lightly brown rabbit in a large, heavy skillet (make sure it has a tight-fitting cover; you will need it later), for about 3 min on each side. Remove rabbit; add in onion, green pepper and garlic. Saute/fry 3 min. Add in remaining ingredients, stir well, and replace rabbit. Cover and simmer about 1 hour. Serve over warm buttered linguine with a crusty loaf of garlic bread.
- This recipe yields 6 servings.
- Comments: A traditional Italian dish, cacciatore is usually offered in restaurants with chicken or possibly veal. It evolved, however, around game ("cacciatore" actually means "hunter"). This is a great recipe for almost any game, but I find it particularly well-suited to cottontail rabbits and snowshoe hares.
