Receta Ramp Ravioli With One Hour Calamari2

Ingredientes
- 6 bn Ramps cleaned and whole
- 1 Tbsp. Black pepper
- 2 x Plum tomatoes finely minced
- Â Â Salt to taste
- 1 x recipe Black Pasta see * Note
- 1 c. One Hour Calamari see * Note
- 4 Tbsp. Extra-virgin extra virgin olive oil
- 2 bn Chives cut in 2" sticks
Direcciones
- Preheat grill.
- Place ramps on grill and cook till tender and smoky, about 1 minute. Remove ramps from grill and allow to cold. Chop cold ramps into 1/4-inch pcs and place in small mixing bowl with black pepper and tomatoes. Season with salt and set aside.
- Bring 6 qts water to boil and add in 2 Tbsp. salt.
- Roll pasta to thinnest setting and cut into 3-inch squares. Place 1 Tbsp. ramp mix in center of each square and fold into a triangle. Continue till all pasta is done. Place ravioli in boiling water and simmer till cooked, about 4 to 5 min.
- Meanwhile, heat calamari and extra virgin olive oil in a 12- to 14-inch saute/fry pan till boiling. Lower heat to simmer and add in chives. Drain ravioli and toss into pan with calamari. Toss to coat and mix gently. Pour into hot platter and serve immediately.
