Receta Red Beans And Rice Soup With Shrimp

Ingredientes
- 1 Tbsp. Vegetable oil
- 1 c. Minced onion
- 1/2 c. Coarsely minced celery
- 1 x Garlic clove, chopped
- 2 Tbsp. All-purpose flour
- 1Â 1/2 c. Water
- 1/4 c. Long-grain rice, uncooked
- 1 tsp Chili pwdr
- 1/2 tsp Grnd cumin
- 1/4 tsp Salt
- 14Â 1/2 ounce Canned whole tomatoes (no-salt-added), undrained minced
- 10Â 1/2 ounce Low-sodium chicken broth
- 3/4 lb Small fresh unpeeled shrimp
- 15Â 1/2 ounce Canned red beans, liquid removed
- 1 Tbsp. Lime juice
Direcciones
- Heat oil in a large Dutch oven over medium heat. Add in onion, celery, and garlic; saute/fry 5 min. Sprinkle with flour, stir well, and cook an additional minute, Add in 1 1/2 c. water and next 6 ingredients. Bring to a boil; cover, reduce heat, and simmer for 20 min.
- Peel and devein shrimp. Add in shrimp and red beans to rice mix, and stir well. Cook, uncovered, 5 min or possibly till shrimp is done. Remove from heat, and stir in lime juice.
- Yield: 7 1/2 c. (serving size: 1 1/2 c.).
