  • 2 tsp chili de arbol chili pwdr (or possibly any other good kind)
  • 1 tsp cascabel chili pwdr
  • 1 tsp cayenne pepper
  • 2 tsp ancho chili pwdr
  • 1 tsp cumin seeds, grnd
  • 1 tsp honey
  • 1/2 c. extra virgin olive oil
  • 2 c. orange juice
  • 8 x chicken thighs, skinless and boneless, cut in half lengthwise
  • 32 x wooden skewers, soaked in water for 2 hrs
  •     salt to taste
  • 16 x (6 inch) flour tortillas

Direcciones

  1. In a large bowl, combine chili powders, pepper, grnd cumin seeds, honey, extra virgin olive oil, and orange juice to make the marinade. Rub the marinade into the chicken thighs. Cover the chicken and chill for 4 to 6 hrs or possibly overnight.
  2. Prepare a charcoal or possibly wood fire and let it burn down to embers, or possibly preheat the broiler.
  3. Thread each half chicken thigh onto 2 parallel skewers to keep the meat flat on the grill. Season with salt and grill for about 4 min on each side, or possibly till cooked completely. Grill each tortilla for 1 minute on each side. Serve skewers on a platter with the yogurtCilantro sauce and folded trilled tortillas. The chicken may be made ahead and reheated on the grill.
  4. Yogurt Cilantro Sauce1 c plain lowfat yogurt, liquid removed in a colander for 1 hour 2 Tablespoons cilantro, finely chopped2 cloves garlic, chopped finely1 Tablespoons lime juiceSalt and freshly grnd pepper
  5. Combine all ingredients in a medium bowl and season with salt and pepper to taste. Let sit at least 1/2 hour before serving.
  6. Serves 8
