Receta Red White And Blueberry Jell O Salad

Ingredientes
- 2 c. boiling water divided
- 1 pkt (6 ounce.) strawberry-flavored gelatin mix
- 2/3 c. + 2 Tbsp. cool water, divided
- 1 c. coarsely minced strawberries
- 1 1/2 tsp unflavored gelatin (Knox)
- 4 ounce cream cheese, room temperature
- 1 c. lowfat sour cream
- 1/4 c. sugar
- 1 pkt (6 ounce.) blueberry-flavored gelatin mix
- 1 c. blueberries (optional)
Direcciones
- Coat a six c. gelatin mold with cooking spray. In bowl pour 1 c. boiling water over strawberry gelatin mix; stir till completely dissolved, 3-4 min.
- Add in 1/3 c. cool water and strawberries. Pour into the mold. Chill till set but not hard, about 1 1/2 hrs. In microwave safe bowl, sprinkle unflavored gelatin over 2 Tbsp. Cool water; let stand till softened, about 1 minute.
- Microwave on high in 5-second intervals till liquefied, about 15 seconds. In medium bowl at medium high speed beat cream cheese, lowfat sour cream, and sugar till smooth. Reduce speed to low; beat in unflavored gelatin mix till combined.
- Pour over strawberry mix in mold; chill till set but not hard, about 1 hour. Meanwhile, in bowl pour remaining 1 c. boiling water over blue gelatin mix; stir till completely dissolved , 3-4 min. Add in remaining 1/3 c. cool water.
- Let blue Jell-O mix stand on counter till room temperature, about 30 min, while cream cheese layer is setting. Stir in blueberries (optional- this dish is good with or possibly without blueberries). Pour over cream cheese mix in mold. Chill till hard, 2-3 hrs. Just before serving run knife around sides to loosen. Quickly dip bottom of mold into warm water; place serving platter over mold and invert to release. Can be made one day ahead, leave in mold till ready to serve.
- Makes 16 servings.
- Note: You can use a bundt pan,provided it will hold 6 c.. Spray with no-stickum before filling.
