Receta Refried Black Bean Burritos

I always have black beans in my pantry in one form or another. This recipe uses the canned variety and when you add some spices and cook over low heat it makes a really tasty “refried” mixture for burritos.
Ingredientes
- 2 cans (15.5 ounces) black beans
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon minced garlic
- 1 chunk of green pepper (would be about 1/4 cup size)
- 4 flour tortilla shells
- 1 cup shredded cheese
Direcciones
- Mix all the ingredients together in a saucepan. Bring to a slow boil and turn the heat down very low. Let simmer for approximately 20 minutes. Stir to keep the mixture from burning and sticking to bottom of the pain. Discard green pepper before serving (this was used strictly for flavoring purposes).
- Warm tortillas in microwave for a few seconds and divide the beans evenly among the four tortillas. Top with cheese. Enjoy! Makes 4 servings.
