Receta Rice-Lentil Salad
Rice-Lentil Salad-is an easy recipe for a side salad. Takes only 10 minutes to prepare. Main ingredients are white rice, lentils, celery, bell peppers, parsley and chicken broth served over lettuce leaves with a vinaigrette dressing. Ingredientes
- (1-3/4) cups chicken broth
- 1/2 cup uncooked long grain white rice
- 1/3 cup dried lentils
- 2 tbsp chopped fresh parsley
- 1 dash cayenne pepper
- 1/2 cup sliced celery
- 1 medium size red onion, chopped
- 1/2 cup diced bell pepper (red or green)
- 1/2 cup fat free vinaigrette salad dressing
- 6 lettuce leaves
Direcciones
- Heat broth to a boil in a 2-quart saucepan over medium-high heat. Stir in rice and lentils. Reduce heat to low. Cover and cook 20 minutes or until done. Let stand 5 minutes or until liquid is absorbed.
- Toss the lentil mixture, parsley, cayenne pepper, celery, onion, green pepper and vinaigrette together in a large bowl until evenly coated. Cover and refrigerate for at least 2 hours or overnight. Season to taste. Serve over the lettuce leaves.
