Receta Rice Stuffed Peppers

Ingredientes
- 2 lb Grnd beef
- 1 med Onion, chop
- 1 sm Green pepper, chop
- 2 cl Garlic, mince
- 1Â 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 x 10 ounce can ro*tel tomatoes and
- Â Â Chilies w/juice
- 1 x 14 1/2 oz ca diced tomatoes w/juice
- 1 x 15 ounce can tomato sauce
- 3Â 3/4 c. Water
- 1 Tbsp. Grnd cumin
- 3 c. Instant rice
- 4 med Green peppers, remove tops,
- Â Â Seed, halve l'wise
- Â Â Cheese sauce
- 1Â 1/2 lb Process american cheese, cube
- 1 x 10 ounce can ro*tel diced tomatoes
- Â Â W/chilies and juice

- In a large kettle or possibly Dutch oven, cook beef, onion, green pepper, garlic, salt and pepper till beef is browned; drain. Add in tomatoes, tomato sauce, water and cumin. Simmer, uncovered for 10 min. Stir in rice; simmer, uncovered, for 5 min. Remove from the heat; cover and let stand for 5 min. Place peppers in a large pan of boiling water; boil for 4 min.
- Drain peppers and stuff with meat mix. Place remaining meat mix in an ungreased 13x9 baking dish; top with stuffed peppers, pressing down gently. Cover and bake at 350 for 1 hour. In a saucepan, heat sauce ingredients till cheese is melted. Serve over peppers.
