  • 1 lrg onion, minced
  • 2 Tbsp. oil
  • 2 lb armadillo, chili-grind
  • 28 ounce canned tomatoes, undrained
  • 1 tsp sugar
  • 2 tsp grnd cumin
  • 2 tsp paprika
  • 1 lrg garlic clove, chopped
  • 1 bot beer
  • 2 x fresh jalapenos, seed & minced fine
  • 5 Tbsp. refrigeratepwdr
  •     salt and cayenne, to taste
  • 4 Tbsp. Instant Corn Masa, for thickening
  • 1 Tbsp. Tequila

Direcciones

  1. In a medium pot, over medium-high heat, saute/fry onion in oil. Chop grnd meat into bite-size pcs, removing all fat and gristle. Add in to onions and stir till browned. Add in tomatoes, sugar, cumin, paprika, garlic, beer, jalapenos, chili pwdr, salt and cayenne pepper to taste. Cook uncovered, over medium-low heat till thick, about 1 1/2 hrs. This is best done in a bar-be-que pit over mesquite coals with the lid closed.
  2. Thicken with Masa, if needed. When ready to serve, put into a large bowl.
  3. Pour Tequila over it and carefully light.
  4. Makes 8 servings.
